The word “wagyu” is a simple translation of a term for Japanese (Gyu) Cow(Wa). Traditionally Wagyu beef comes from 1 of 4 breeds of Japanese cattle; Black, Red, Shorthorn or Polled and specifically chosen for their high quality, intense marbling and superior taste.

Modern Wagyu beef is now raised in many parts of the world with great success; Japan, Australia, Canada, America, South America and the UK all produce their own distinctive Wagyu beef.

Wagyu beef is prized for its characteristic marbling which provides a higher ratio of unsaturated(good) fat to saturated(bad) fat, relative to conventional grocery store beef. Fortunately, this also means a higher level of Omega 3 and 6 fatty acids versus conventional beef. It’s like having your steak and eating it too.
