The word “Wagyu” is a simple translation of a term for Japanese (Gyu) cow (Wa). Traditionally, Wagyu beef comes from one of four breeds of Japanese cattle: Black, Red, Shorthorn or Polled. They are specifically chosen for their high quality, intense marbling and superior taste.

Modern Wagyu beef is now raised in many parts of the world with great success, including Japan, Australia, Canada, the United States, Central America, South America and the UK. All produce their own distinctive Wagyu beef.

 

Wagyu beef is prized for its characteristic marbling which provides a higher ratio of unsaturated (good) fat to saturated (bad) fat, relative to conventional beef. This also means a higher level of Omega 3 and 6 fatty acids. It’s like having your steak and eating it too.
